  1. Start by rehydrating, destemming, and seeding all your chiles. (Here are the directions for rehydrating chiles if you need them!)
  2. Add your prepped chiles to a blender and roughly chop your tomatoes, onions, and garlic cloves. They will be blended so the chopping does not need to be precise.  
  3. Add in your chopped veggies, lime juice, grapeseed oil, and a teaspoon of sea salt to start.  
  4. Blend the mixture on high until the sauce is thick but smooth. Taste for salt and add if needed. 
  5. Transfer to a serving bowl and enjoy!

  1. Plasce the 2 frozen chicken breasts directly in the pressure cooker with about 2 cups of salted water or enough to just barely submerge the chicken in the pot. Turn the pressure cooker on high for 10-12 minutes and quick release the seal.
  2. While the chicken cooks you can start to get your tortillas warm & crispy. Pour the vegetable oil into a small pan, enough to coat the bottom. Warm until it begins to sizzle.
  3. Add salt to make sure the oil is ready for the tortilla. Carefully, put a corn tortilla in the oil flipping as needed till crispy and hot.
  4. Remove the tortilla from the pan and put it onto a paper towel to dry. Repeat for as many tortillas as needed for the meal.
  5. Once the chicken is ready, take it out and put it into a bowl. Use two forks or a food processor to shred the chicken. Season the chicken with our famous Taco Mix along with salt and pepper to taste.
  6. Begin to assemble your tacos and feel free to add salsa, cheese of your choosing, and avocado!

This salsa recipe is completely customizable and focused on showcasing the flavors of your favorite chiles.   To take the heat level down, carefully remove the stems and seeds as well as all veins from the middle of the chile. If you like the spice, feel free to destem and deseed to your liking.  The bold flavor of this salsa is great enjoyed with chips as well as on top of tacos, stirred into soups, added to breakfast burritos, or garnishing some nachos.  Enjoy this salsa using the high-quality chiles and spices Don Juan Chiles has to offer for a delicious result!  ¡Provecho!

Feel free to substitute the sugar for honey, agave syrup, or a sugar-free sweetener! Be sure to use a small amount and taste test as you go. The sugar helps cut through acidity and helps to get rid of any bitterness.

  1. Rehydrate the chiles using our proven chile rehydration method
  2. Preheat the broiler
  3. Quarter your tomatoes and onion and slice your peeled garlic cloves in half. Spread these onto your baking tray and top with olive oil
  4. Season with salt and pepper and broil until you see a nice char on the vegetables. This should take about 10 minutes, but keep a careful eye on the oven
  5. Add the charred veggies, rehydrated chiles, and the rest of the spices into your blender. Be careful as the mixture will be hot! 
  6. Blend until smooth; do this step in two batches if needed
  7. Add the blended salsa back into your pot and set to low heat. Add in your sugar, or sweetener of choice, and your lime juice
  8. Add water to the pot to thin out the salsa if you find it too thick. Taste for salt and pepper and add more if needed. Transfer to a serving bowl and enjoy!
