Birria Tacos

When you order dried chiles online from Don Juan Chiles or any of the other traditional Mexican ingredients we offer, you can make all kinds of different authentic Mexican dishes. We wanted to share one of our favorites with you – birria tacos!

Instructions

Preparation

  1. Season your chosen meat with salt, pepper, and cumin.
  2. Cut open dried chiles and remove seeds.
  3. Fry dried chiles with a little bit of olive oil in a frying pan for a few minutes, keeping them moving so they do not burn.
  4. Put the now fried chiles into a small pot with boiling water for 10 minutes or until soft.
  5. Add 1 tablespoon of oil along with onions and tomatoes to the pan the dried chiles were taken out of. Cook until onions and tomatoes are browned, then add bay leaves, garlic, peppercorns, the half cinnamon stick, and all other spices except ground ginger and cumin. Let this mix of ingredients cook for 5 minutes, stirring it often.
  6. Add the softened chiles and water, ingredients from step 5, the ground ginger and cumin, and apple cider vinegar into a blender. Blend until the mixture is smooth. Expect it to be thick.
  7. Strain the mixture, pour it over the meat in a large bowl, and cover.

From here, you can choose to cook the meat on the stovetop, in the oven, or in an electric pressure cooker (our recommended method). 

Stovetop

  1. Place meat and marinade into a big stockpot. Cover and cook for 3 hours or until the meat falls off the bone and can be shredded easily.

Oven

  1. Place meat and marinade on a large oven-safe dish and cover with aluminum foil. Set oven to 350 degrees Fahrenheit and let cook for 2 hours or until the meat can be shredded easily.

Electric Pressure Cooker

  1. Place meat and marinade inside of an electric pressure cooker and seal the lid. You can choose not to add the broth if you only want to cook the meat.
  2. Set it to high pressure and let cook for 45 minutes. Once done, release pressure naturally for 5 minutes before using whatever quick pressure release option is available for the rest of the pressure.

After the meat has been cooked, shred it to your liking and fill a tortilla of your choice. Place broth in a bowl to dip your tacos in.
