From Mexico. Use oregano in traditional dishes from beans to burritos, moles, tamales, tacos and salsas. Mexican oregano isn’t technically oregano but it lends a sturdy oregano flavor which stands up to chiles and other intense flavors. It is beloved by Latin American cooks who prefer it over Mediterranean oregano. In North America, Mediterranean oregano is more familiar. You’ll want to adjust the amounts of Mexican oregano you use. It can overpower a dish so use sparing and taste frequently.
