Chimichurri

Don Juan’s Chimichurri Sauce

Chimichurri is a delicious sauce made from spices, herbs, vinegar, and oil. It is fresh, zesty, and so versatile in the kitchen. You can add Chimichurri to your meat marinades or serve it on top of steak as a dipping sauce.   Mix Chimichurri into soups or add into salads for an herbal zing. Use this tasty sauce on pasta or even on top of eggs in the morning!  ¡Provecho!

Have fun substituting any herb or spice out for your favorite flavors! People love to entirely switch out the parsley for cilantro in this recipe. Also, be sure to make use of what is in season. 

If you have a food processor on hand for this recipe, use it! This makes quick work of all the necessary chopping. Simply process the ingredients separately and then combine.

Cutting board, sharp knife, medium-sized mixing/serving bowl.

  1. Mince the shallot and garlic and add to your bowl. Finely chop your fresh parsley and add that to the bowl as well. 
  2. Add in your salt, crushed jalapeno or crushed red pepper, cilantro flakes, oil, and vinegar. 
  3. Mix together and taste for seasoning. Add more salt or heat depending on how you like it and let the sauce sit at room temperature for at least 20 minutes before serving. The longer the sauce sits, the more intensified the flavors become. 
  4. Cover and store the sauce in your refrigerator to make it last for a few days. You will start to notice the parsley green color becoming dull, when that happens, it’s probably time to throw it out.
