From China. Exotic-looking star anise is used in many Asian dishes especially pork and poultry to increase savoriness. It’s essential in Chinese Five Spice and Vietnam’s national noodle soup, pho. It is pungent with a stronger licorice flavor than anise, deep with hearty floral undertones without off-putting notes. Add whole to marinades and slow-cooked meats, stews and soups (remove before serving) or add with whole cinnamon and cloves to steep in a pot of tea.
