Hominy is a key ingredient in Menudo and of course, Pozole, the traditional, Mexican hominy stew. To the Aztecs, maize was a sacred plant so pozole was reserved for rituals and special occasions. Even today, people celebrate holidays with rich pozole. Is it Saturday? Go ahead and celebrate! It all starts with hominy or white maize, the large puffy kernels that resemble the ‘corn nuts’ often eaten with beer. They resemble corn nuts because both are hominy.
