Known as ‘the fish herb’ by Italian and French cooks, fennel seeds are extremely popular in Europe and the Mediterranean. They lend a bitter licorice flavor which is surprisingly good in food, even if you aren’t a fan of the candy. The French include it in their Herbs de Provence blend. The Italians add it to everything. Elsewhere, ground fennel compliments everything from curries to puddings. For best flavor, add towards the end of cooking.
