From Mexico. Achiote (you may know it as annatto)
is used both as a spice and as a colorant where its orange-red hue lends a gorgeous yellow to foods. Used regularly in Filipino, Mexican, and other Latin American cooking, people everywhere substitute achiote in dishes calling for saffron, the most expensive spice in the world. It makes a wonderfully yellow Arroz Con Pollo with its peppery aroma and subtle, sweet-nutty and earthy flavor.
