Chile Pasado is a whole, dried, green chilaca chile. This chile is know for its rough and rugged appearance, yet brings the flavor you want in your next dish. It’s is often judged differently than most other produce–instead of a perfect exterior, you want a very wrinkled chile. Need an intro to chiles? Chile Pasado’s taste is mild enough for the less initiated chile palate. Once reconstituted in water and cut into strips, Chile Pasado become a tasty treat in huevos rancheros, enchiladas, bean soups, queso salsas or even just guacamole. The taste is mild enough for the “less initiated” chile palate.
