The Story

Loaded Nachos

Nachos have a long storied history. Something about a guy named Ignacio (people called him Nacho) winging a snack for some ladies shopping in Eagle Pass, Texas. They’ve evolved significantly since Nacho fried up some tortillas, melted some shredded cheese over the top, and garnished them with some jalapenos.

Nowadays, nachos have become the quintessential cheat meal. Smothered in salsa, sour cream, and guacamole with shredded chicken, black (and pinto) beans, you can basically clear out all the ingredients that are about to go bad in your fridge and throw them on top of some chips. Don’t forget the cheese though… you can’t ever forget the cheese.

Not only are nachos a great guilty pleasure meal, they’re also a great appetizer at any get together. Whether you’re doing a build your own nacho bar, or a meticulously crafted tower of loaded nacho goodness, people will be happy.

Thoughts before starting

Prep Work

  • Mix all the spices together in a bowl so you can just pour it over the ground beef at once
  • Chop the green bell pepper and tomato (about a cup each) and green onions (about a ½ cup) and keep them separate so you can sprinkle them individually over the nachos

Directions

  1. In a large skillet, cook the ground beef so it is no longer pink
  2. Drain any fat from the pan
  3. Add spice mix to the meat, stir until well incorporated
  4. Set your oven to broil
  5. Get out an oven-proof platter, and add the first layer of tortilla chips
  6. Sprinkle with cheese, and begin sprinkling all the remaining ingredients over top (except the tomato, sour cream, guacamole, and salsa–save that until last)
  7. Continue layering and sprinkling until you’re happy with the tower of nachos
  8. Place the loaded nachos in the pre-heated oven to melt the cheese and warm all the rest of the ingredients (should only take a couple minutes, but watch it so you don’t burn anything)
  9. Carefully remove the nachos from the oven and top with the tomato, sour cream, guacamole, and salsa

Spice it Up

You can really use whatever ingredients you’d like to make this special for your family. Pick a theme and run with it–BBQ? Italian? Greek? Go wild!
